The weather turned today and threw winter temperatures and blustery winds in our face!!! I am NOT READY for ⛄️weather!! So I’m working on the materials for my 2026 1st quarter Memories & Mochas photo organization workshop series (click FOLLOW to hear more soon) and decided I needed a snack! I used plain Greek yogurt instead of oil (1:1 swap). Woody approved pre-chocolate chip. Greek Yogurt Pumpkin Oatmeal Bread Preheat oven to to 350F Lightly grease 9x5 loaf pan Combine wet ingredients: 1 cup canned pumpkin puree 2 eggs ½ cup sugar ½ cup brown sugar packed ½ cup plain Greek yogurt Combine dry ingredients: 1½ cups all purpose flour 1 tsp baking soda ½ tsp salt 1 ½ tsp cinnamon ¼ tsp nutmeg 1/2 cup oats (optional) Gradually add wet ingredients to dry. Mix just until well combined. Fold in 1/2 cup chocolate chips if desired. Pour into pan. Bake 1 hour at 350 Cool in pan 20 minutes Remove and let rest before serving. ENJOY!!
